Palm Sugar (Nam tann peep).
Made from the sap of the coconut palm or the sugar palm tree, palm sugar varies in colour from golden to light brown. It has a distinctive flavor and it is not too sweet as cane sugar. It is often sold as a solid cake, grate it before use. If it comes in a jar, in this case you may heat it up in a microwave. This helps made a little easier to scoop out.
